Lorenza Pasetti is the third-generation leader of Volpi Foods, one of America's oldest artisan producers of quality dry-cured meats. Joining the family business from graduate school, Lorenza together with her father, sought to grow the company from its corner-store location to now operating four uniquely designed plants with a total of 380,000 square feet devoted to the production of dry-cured salami, pancetta, guanciale, coppa, mortadella, and prosciutto. Volpi Foods has incorporated a Raised Responsibly pork program (2019) which concentrates on specific sustainable farming practices to further ensure the premium nature of the fresh U.S. pork utilized in their old-world processes. Although many of the small batch production methods used have been constant, the relationships between science, food safety, and manufacturing have developed to ensure a continued legacy for future generations.
